fois la plus facile \u00e0 faire et la plus classique.<\/p>\n<p>Elle consiste \u00e0 faire fondre du chocolat (que vous aurez hach\u00e9 au pr\u00e9alable) dans un bain-marie tout en m\u00e9langeant et en contr\u00f4lant la temp\u00e9rature fr\u00e9quemment.<\/p>\n<ol>\n<li>Placez le r\u00e9cipient dans le bol d\u2019eau froide tout en m\u00e9langeant r\u00e9guli\u00e8rement pour faire chuter l\u2019eau \u00e0 environ 35\u00b0C, tous types de chocolat confondus.<\/li>\n<li>Sortez le r\u00e9cipient du bol d\u2019eau froide tout en continuant de remuer le chocolat pour lui faire atteindre la temp\u00e9rature indiqu\u00e9e T\u00b02.<\/li>\n<li>Enfin, placez de nouveau le chocolat au bain-marie un bref instant pour le r\u00e9chauffer jusqu\u2019\u00e0 sa temp\u00e9rature de travail, not\u00e9e temp\u00e9rature 3 ci-dessus.<\/li>\n<\/ol>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-618f510 sc_fly_static elementor-widget morceaux de petite taille (plus petits que les carreaux d\u2019une tablette), \u00e0 moins ce que vous n\u2019utilisiez des pistoles, auquel cas cette \u00e9tape n\u2019est pas n\u00e9cessaire.\u00a0<\/p>\n<ol>\n<li>Faites fondre les \u00be de votre chocolat au bain-marie jusqu\u2019\u00e0 T\u00b01.<\/li>\n<li>Enlevez le cul-de-poule de la casserole et retirez \u2153 du chocolat fondu, r\u00e9servez dans un bol.<\/li>\n<li>Ajoutez le \u00bc restant de chocolat non fondu au chocolat fondu dans le cul-de-poule, m\u00e9langez jusqu\u2019\u00e0 ce que la temp\u00e9rature atteigne T\u00b02.<\/li>\n<li>R\u00e9int\u00e9grez le tiers de chocolat mis de c\u00f4t\u00e9 en \u00e9tape 2. Elle est la moins simple \u00e0 r\u00e9aliser puisqu\u2019elle n\u00e9cessite en principe un plan de travail en marbre.<\/p>\n<ol>\n<li>Le principe de base est le m\u00eame. Il faut hacher le chocolat en petits morceaux puis le faire chauffer au bain-marie jusqu\u2019\u00e0 sa temp\u00e9rature T\u00b01.\u00a0<\/li>\n<li>Ensuite, il faut verser \u2154 du chocolat fondu directement sur le marbre pour le faire baisser en temp\u00e9rature, jusqu\u2019\u00e0 T\u00b02, tout en remuant continuellement avec une spatule.
